This post is dedicated to Mike's co-workers, Karen and Marilyn, who always smell his leftovers as he heats them in the microwave at work . You, also, can smell up the hallway with yummy dishes and make Mike ask, "What are you eating? Can I have the recipe?"
I made some yummy sausage manicotti the other night and got the recipe here:
http://elizabethsedibleexperience.blogspot.com/2009/08/stuff-it.html. It was delicious. Whole milk ricotta is really so much better than part skim.
I made a few changes to the recipe. Instead of beef and Jimmy Dean sausage, I used 1 lb. of basil chicken sausage. I completely cooked the sausage instead of just browning it. I used 1/2 a shallot instead of an onion and didn't use any butter on top of the manicotti. Butter on top of manicotti seems a bit excessive. Also, I prepared it all about 4 hours before I cooked it because that is when I had time. She says to use a plastic bag to put the stuff into the shells, but I found it easier to just sort of roll the cheese and sausage mixture up and stuff it in with my hands.
Enjoy!

Yummy! Scott gets the same comments, unfortunately, my recipes aren't nearly as delicious sounding as yours! How do you find the time? (actually, I'm probably just lazy!:)
