I Like Being a Mommy

Now that I've been a mom for 5 months, I see why people love their kids so much. Sophia went to bed at 6:30 last night and Mike and I were sort of sad because we didn't get a lot of time together with her. I remember the days when all I wanted was for her to go to sleep.

She is doing so well. I've finally realized how often she needs to sleep which is preventing her from turning into "crazy, overtired baby" and giving me a lot more time to myself. A couple days after she turned 5 months she started sitting-up by herself. I still put something around her just in case she falls, but she's been quite stable. Also, she is getting really good at falling asleep by herself. We still have some random hard cries, but it is usually minimal. Her attachment is a little stuffed giraffe with silk on it. Pretty cute. I've also introduced another one that is similar to the giraffe and have been alternating between the two. I'm trying to think ahead for when I want to wash one of them...drama prevention.

Lentil Tacos

I made these lentil tacos last night and they were so good. My friend, Chelsea, found the recipe a while ago and I finally decided to try it. I didn't mash them like it said and didn't make the adobo sauce because I didn't have any peppers. They make a cheap, quick and delicious meal. I put avacado and lime in mine and it was great! Here's the recipe:

LENTIL TACOS

Ingredients
1 tablespoon olive oil
1 cup finely chopped onion
1 clove garlic, chopped
1/2 teaspoon salt
1 cup dried brown lentils, rinsed ( I didn't rinse them)
1 package (2.25 ounce) taco seasoning
2 1/2 cups vegetable broth ( I used chicken broth)
1/2 cup fat-free sour cream
1 chipotle chile in adobo sauce, finely chopped (use half for less heat)
2 teaspoons adobo sauce
8 taco shells
1 1/4 cups shredded lettuce
1 cup chopped tomato
1/2 cup shredded reduced-fat (2 percent) cheddar

Preparation
Heat oil in large skillet over medium-high heat. Cook onion, garlic and salt until onion begins to soften, 3 to 4 minutes. Add lentils and taco seasoning. Cook until spices are fragrant and lentils are dry, about 1 minute. Add broth; bring to a boil. Reduce heat, cover and simmer until lentils are tender, 25 to 30 minutes. Mix sour cream, chile and adobo sauce in a bowl. Uncover lentils and cook until mixture thickens, 6 to 8 minutes. Mash with a rubber spatula. Spoon 1/4 cup lentil mixture into each taco shell. Top with 2 heaping teaspoons sour cream mixture, lettuce, tomato and cheese.

5 Months

Sophia is 5 months old. She has become very verbal and curious. She always wants to be looking around at everything. Baths are one of her favorite activities. We finally have her going to bed earlier which is great for me and Mike. I've missed my evenings with him, so it's good to have those back. We've started putting her down to bed and letting her cry...total torture, but she's getting better. I'll be glad when we get through this phase.

I'm loving being home with her and so thankful that I get so much time to be with her.
